Sustainable food production, which future?

The Nanomem project is a series of training classes designed to deliver the most relevant state of the art on nanostructured materials to the young researchers for a career development in line with the scientific, industrial and societal needs and challenges.

The Nanomem course on 'Nanostructured materials and membranes for Food Processing' is the last of the series. Financed by the European community, it is coordinated by the Institute on membrane technology (Itm-Cnr) and will be held  in Cetraro (Cosenza, Italy) 15-24  September, 2010. The course will analyze the state of the art and future needs for sustainable food production and processing, aiming at achieving valuable co-products while avoiding the formation of by-products.

Nanostructured material functions are crucial in most of the food manufacturing processes. Indeed, their selective mass transfer properties, ability to promote controlled release, biocompatibiliy and biodegradability, regular structure at nano and micro-scale make them relevant tools for improving food quality, safety and stability.
